Coconut burfi recipe | thengai burfi recipe | nariyal burfi recipe


Delicious sweet dish coconut burfi or thengai burfi (in tamil) which can be made on any festive or special occasions and is made with grated coconut, milk and sugar.  This delicious sweet must and should have after lunch / dinner and it tastes deliciously amazing like kalakand. 

As Diwali is nearing by I would like to share my mother-in-law's simple and delicious sweet with less ingredients. I am sure everyone in your family will definitely love this dish. 

Generally to get grated coconut, we use coconut scraper while scraping scrape only the white portion of coconut, be careful not to scrape brown portion of coconut as it will be hard and doesn’t give a smooth burfi texture. If the coconut scraper is not available at your home, don't worry as i shown in the video by using mixie jar you can get grated coconut.


Note
  • Use only juicy and fresh coconut and is not from young coconut. Do not use desiccated coconut as it doesn’t have moisture.
  • I prefer to use home made fresh coconut, if not possible you can replace with frozen fresh coconut of your choice but comparingly by taste and health wise home made is the best.

Ingredients for coconut burfi:

  • Freshly grated coconut - 3 cups ( 2 medium sized coconuts)
  • Sugar - 3 cups or adjust to your taste
  • Full fat milk - 3 cups
  • Cardamom powder - 2 tsps
  • Ghee - 3 tsps + 2 tsps

Procedure for coconut burfi:

  • Break the coconuts and remove coconut kernel from its shell. (Here I am using 2 medium sized coconuts).
  • Now peel out the outer skin brown portion by using peeler. (Make sure to use juicy and fresh coconut and is not from young coconut. Do not use desiccated coconut as it doesn’t have moisture).
  • Now wash it well under running cold water and cut them into small cubes. Now grind these coconut pieces in multiple pulses to get the right consistency (like grated coconut). While grinding take these coconut pieces for 1/4th portion in a mixie jar and grind in multiple pulses in multiple batches.
  • Here you can even grate the coconut by using coconut scraper, while scraping scrape only the white portion of coconut, be careful not to scrape brown portion of coconut as it will be hard and doesn’t give a smooth burfi texture. Set this aside.
  • Now take thick heavy bottom plate and grease with 2 tsps of ghee.  Set aside.
  • Into a pan, add 3 cups grated coconut (to get 3 cups of grated coconut, i used 2 medium sized coconuts), 3 cups sugar, 3 cups full fat milk. Mix it well and cook this on a medium flame.
  • Mixture will start to bubble up after 4 to 5 minutes of cooking and becomes watery consistency. If the milk boils over, try to reduce the flame to low for couple of minutes and increase the flame again.
  • Keep mixing in regular intervals. The mixture will slowly starts to thicken up. you have to be little patience.
  • After 30 minutes, the mixture would start drying up, it will be soft and sticky( gooey) at the stage.
  • After 15 minutes. The mixture will be thick and will not have any moisture left. It starts to leave from sides of the pan.
  • At this point add 3 tsps ghee, 2 tsps cardamom powder. Mix it well and turn off the flame.
  • Now transfer or dump into a greased plate and spread it evenly with spatula.
  • Leave it for 5 minutes and mark it into desired shape. Garnish with some pistachios, this is completely optional.
  • Allow it to cool down completely and gently remove each piece into serving plate or into a storage container. You can refrigerate these coconut burfi for 10 to 15 and serve it cold or at room temperature.
