Mixed veg white sauce pasta recipe | White sauce pasta recipe | Creamy veg pasta recipe

Quick and delicious kids favorite, Indian style mixed veg creamy white sauce pasta which can be prepared very easily at home.



Few Tips and Tricks / Key points:

  • Boil pasta by adding enough amount of salt until al dente for about 6 to 8 minutes on medium heat or boil pasta as per the instructions given on the pack and also stir in regular intervals so that pasta doesn’t stick to the bottom of the pan. 
  • Do not use oil while boiling pasta, by adding oil pasta will be non-sticky and will not absorb white sauce.  
  • Once pasta is well cooked, drain out all the water by using colander or wire skimmer. Transfer to other bowl and add some cold water, drain out all the water to prevent pasta from further cooking.
  • Generally for pasta we use butter, but instead of butter you can replace with olive oil of your choice. 
  • For mixed veggies, i have used like colored bell pepper / capsicum, Carrot, Broccoli, Sweet corn. You can use any kind of veggies of your choice.  
  • While making white sauce pasta, add full fat milk | whole milk in batches or slowly with one hand and keep on stirring continuously with other hand by using spatula to prevent from lumps. 
  • Instead of Basil and oregano, you can replace with Italian seasoning.

Serves or Yields: 2 to 3 

Ingredients to boil pasta:
  • Pasta / Elbow pasta / Penne pasta – 1 cup large
  • Water – 7 cups
  • Salt – To taste
Ingredients for white sauce:
  • Butter – 1 tbsp
  • Garlic clove – 1 large sized finely chopped
  • Maida or All-purpose flour – 1 tbsp
  • Whole milk / Full fat milk – 1 cup
  • Red chili flakes – ½ tsp
  • Salt – to taste
  • Basil – ¼ tsp
  • Oregano – ¼ tsp
  • Pepper powder – ¼ tsp or required amount
 For other ingredients / Veggies: 
  • Butter or Olive oil – 1 tbsp
  • Garlic clove – 1 large sized finely chopped
  • Green chilies – 2 finely chopped (optional) or adjust as per your taste
  • Mixed veggies - (Coloured bell pepper or capsicum / chopped carrot / Broccoli / Sweet corn / Green peas/ Zucchini / ) - 1 ½ cups
  • Salt – to taste
Procedure for mixed veg white sauce pasta:
  • Boil 7 cups of water in a heavy bottom sauce pan, when water starts to boil, add a cup elbow pasta or any kind of pasta of your choice, a tsp of salt or required amount and Mix it well. Wait for re-boil and cook until al dente for about 6 to 8 minutes on medium heat or cook as per the instructions given on the pack and also stir in regular intervals. Do not use oil, because pasta will be non-sticky and will not absorb white sauce.
  • In the meanwhile, heat a tbsp olive oil or butter in a heavy bottom nonstick pan and add finely chopped garlic clove or minced garlic. saute it well for few seconds.
  • Now add finely chopped green chilies (this is completely optional, i like it little spicy, so I am using it, you can even skip or adjust as per your spiciness). Saute it well for few seconds.
  • Add around 1 ½ cups mixed veggies like chopped carrot, bell pepper, sweet corn, broccoli. you can also add green peas, zucchini of your choice.
  • Now cook these veggies for 3 to 4 on a medium heat or until they are well cooked but they should retain their shape.
  • Once veggies are nice and done, transfer to other plate and set aside.
  • As shown in the video, on other side pasta is well cooked.
  • Turn off the flame, drain pasta by using colander or wire skimmer and transfer to other bowl, add 2 cups cold water and drain out all the water, by doing this way pasta will prevent from further cooking. Set this cooked pasta aside.
  • Heat a tbsp butter or olive oil in same non-stick pan, once butter is melted add a tbsp all-purpose flour or maida and keep on mixing continuously on a medium heat. Make sure you do not brown it.
  • Now add a cup of milk little by little with one hand and keep on mixing continuously with other hand to prevent from lumps free mixture.
  • Keep on stirring continuously until the mixture becomes little thick consistency. 
  • Now turn the flame low to medium and add pepper powder, salt or required amount, red chili flakes. Now take oregano and basil into your palm, crush with both palms and add it. Mix it well.
  • Here as shown in the video, you can see the creamy consistency. now add cooked veggies, cooked pasta and mix it well. If required you can adjust salt and pepper powder consistency at this point.
  • Finally add 3 tbsps of mozzarella cheese. Mix it well, turn off the flame. Serve mixed veg creamy white sauce pasta immediately as warm for breakfast or lunch.
