Rava dhokla Recipe | Instant dhokla recipe | dhokla recipe | Rava dhokla without eno fruit salt

Today I am going to share you a soft and spongy instant tea time snack, rava dhokla without using eno fruit salt. This is a famous recipe from gujarati cuisine and very popular in india which is usually served for breakfast or snack as plain or with green chutney.

We can make this rava dhokla instantly in a quick and easy way by steaming in a pressure cooker. Dhokla steamer or electric cooker works well for steaming rava dhokla.

Important Notes:
  • When you are using sour curd, skip by adding lemon juice.
  • After adding baking soda or eno fruit salt. Mix it gently, do not over mix it. 
  • After adding baking soda or eno fruit salt do not put rava mixture idle for long time. Steam cook batter right away.
  • To get soft and spongy rava dhokla, Steam cook dhokla on medium heat.

Ingredients for Rava Dhokla: 
  • Sooji: 1 cup
  • Curd – 1 cup or thick buttermilk of your choice
  • Lemon juice – 1 tbsp
  • Oil – 1 tbsp
  • Green chili – 2 finely chopped or adjust according to your taste
  • Ginger – 1 inch size
  • Salt – ½ tsp
  • Sugar – ½ tsp
  • Baking soda – ½ tsp or eno fruit salt
  • Thick heavy bottom plate
Ingredients for Seasoning:
  • Oil – 1 ½ tbsp or required amount
  • Sesame seeds – 1 tsp
  • Cumin seeds – ½ tsp
  • Urad dal – 1 tsp
  • Mustard seeds – 1 tsp
  • Green chilies – 3 slit or adjust according to your taste
  • Coriander leaves – 2 to 3 tbsps finely chopped
  • Curry leaves – few
  • Hing – pinch
Procedure for Rava dhokla: 
  • Into a mixing bowl, add sooji, curd, finely chopped ginger, chopped green chili, salt, sugar, lemon juice, oil. Mix all the ingredients well until they are well combined. Cover it and rest it for 15 to 20 mins.
  • To steam cook this rava dhokla, here i am using pressure cooker as shown in the video, for this heat some water in pressure cooker on a medium heat and place small stand or bowl. 
  • On other side grease heavy bottom plate with some oil and set this plate aside.
  • When the sooji or rava mixture is rested for 15 to 20 mins, rava mixture becomes thick consistency as shown in the video. Now to this add some water around 2 tbsps or required amount and make into idly batter consistency.                                                                                                                                                                                   
  • Now add baking soda and mix it gently. Make sure you do not over mix it. Here as shown in the video, you can see it started aerating. (After adding baking soda or eno fruit salt do not put rava mixture idle for long time, Steam cook batter right away).
  • Immediately transfer the mixture into greased plate and path it gently so that if there are any air bubbles it will escape.
  • Now steam cook for 5 mins on medium heat. If you are using pressure cooker, do not put whistle. When you can see the high pressure coming out from the vent pipe. Turn the flame to low to medium and cook for more 5 mins.
  • After 5 mins turn off the flame and allow it to rest for more 5 minutes and then open the lid. (Do not open immediately, steam cooks dhokla).
  •  Rava dhokla is nice and done (you can check it by using fork or toothpick. When you insert in the center of dhokla it should come out clean).
  • Now allow it cool down little bit for few minutes and run knife around the edges of plate. Invert dhokla into another plate. Here as shown in the video, you can dhokla is soft and spongy.
Procedure for seasoning:
  • Heat oil in a small pan. when oil is nice and hot, add mustard seeds and allow it to splutter, add cumin seeds, urad dal, sesame seeds, and pinch of hing.  Saute it well for few seconds and add green chilies, curry leaves and coriander leaves.  Saute it well for few seconds and turn off the flame.
  • Now pour seasoning on dhokla and spread it evenly. Cut into desired shape of your choice.
  • Here our soft and spongy dhokla is ready now. serve it warm as plain or with green chutney of your choice.
