Peanut chikki recipe | పల్లీ పట్టి Perfect స్వీట్ షాపులో లాగా రావాలంటే | Verusenaga achu recipe

Traditional and Healthy peanut chikki which will be delicious and perfect replacement for candies. You can make this peanut chikki under 5 minutes when the roasted peanuts are readily available and can serve it as tea time snack.

Even beginners or bachelors can make this in a quick and easy way by following few important notes and tricks. Once you start making this chikki, i am sure you will never ever get peanut chikki from outside store.




Main important notes are:

  • Roast peanuts on low flame until golden in color, stir them in regular intervals for even frying. By roasting peanuts on a low flame, raw smell goes out from peanuts. (Do not roast on a medium or high flame).
  • On the other side, grease heavy bottom plate and rolling pin with some ghee.
  • Main important is to make perfect syrup, firstly melt sugar completely without adding any water and then add shredded jaggery. (here jaggery doesn't take much time to melt when compare with sugar).
  • while preparing this syrup do not add any water and make sure syrup should get hard ball consistency. (To check the consistency, add a drop of syrup in a cup of water and check the consistency. It should be like rock or hard ball and this is perfect consistency for peanut chikki).
  • Immediately after getting into hard ball consistency, add roasted peanut and mix it well completely as fast as you can. Transfer the mixture immediately into a greased plate, roll it with greased rolling pin for even shape as shown in the video.
  • Now put some gashes of desired shape(square or diamond or your choice), so this will help to get a desired shape when it is at room temperature. (peanut chikki turns to hard when it is at room temperature in which you can't even cut into desired shape).
  • Here colour of the chikki depends on type of jaggery you use. when you are using dark golden jaggery, peanut chikki will be more dark in colour. when you are using light golden color jaggery, peanut chikki will be golden colour.

 Ingredients for Peanut chikki:

  • Raw Peanuts - 1 cup (225 ml)
  • Shredded jaggery - 1/2 cup
  • Sugar - 1/4 cup
  • Cardamom powder - 1 tsp
  • Ghee - 2 tsps
  • Thick heavy bottom plate
  • Rolling pin

Procedure for peanut chikki:

  • Roast peanuts in a heavy bottom pan on a low heat until golden brown colour from all the sides or for 15 to 20 minutes. while roasting these peanuts, stir them in regular intervals for even frying from all the sides. (Here by roasting peanuts on a low flame, raw smell goes out from peanuts).
  • As shown in the video, you can see peanuts are crisp and shred their skin. Transfer to other plate and allow them to cool down completely.
  • Once they are at room temperature, remove the skin of roasted peanuts by rubbing them with both palms and make each peanuts into half as shown in the video. set aside.
  • Heat a heavy bottom pan on medium heat and on other side, grease a tsp of ghee to heavy bottom plate and rolling pin as well. Set them aside.
  • Now add sugar into hot pan and allow sugar to melt completely. Do not add any water.  Here as shown in the video, you can see sugar melted completely, at this point add shredded jaggery, cardamom powder and a tsp of ghee. Mix it well completely and allow the jaggery to get thick consistency. (make sure not to add any water).
  • Here jaggery melted completely and got thick consistency under 10 seconds. To check jaggery consistency, take a bowl of water and add a drop of jaggery mixture. Here as shown in the video, you can see the jaggery became hard rock.
  • At this point, immediately add roasted peanuts and mix it up completely. (Here by adding jaggery that gives a nice texture and by adding sugar, chikki will be brittle).
  • Now Quickly transfer the mixture into a greased plate and immediately level it up equally by using greased rolling pin.  Now immediately put some gashes of desired shape when the peanut chikki is hot, so that you can easily break this chikki once this is at room temperature.
  • Now allow this chikki to cool down completely. Once this is at at room temperature break the peanut chikki. Here our peanut chikki is ready now. store these peanut chikki in an airtight container and can have it whenever you like to have a candy.
  • Once you start making this peanut chikki,  I am sure you will never get it from outside stores.
