Andhra style spicy mutton fry is a Easy and tasty dish. Even beginners or bachelors can make this dish in a quick and easy way by following below process. 

This delicious and tasty, Andhra style spicy mutton fry is a best combination with hot steamed white or brown rice, plain biryani, bagara rice, roti, pulka or plain paratha.


Main important components for spicy mutton fry:

When you are using tender mutton allow this to marinate for 15 to 20 minutes by using the Ingredients to marinate mutton or else marinate at least for 1 hour and for the best result, refrigerate the marinated mutton for overnight and can continue for next step.

There is another method to marinate mutton in faster and simple process, by using raw papaya paste. After marinating mutton with papaya paste rest it for 10 to 15 minutes and can continue for next step.

To get a nice aroma for this dish, add curry leaves while cooking and at the end of the recipe.

Ingredients to marinate mutton:

  • Tender boneless mutton - 1/2 kg
  • Salt - To taste
  • Turmeric powder - 1/8 tsp
  • Red chili powder - 1 tsp or required amount
  • Garam masala powder - 1 tsp
  • Freshly crushed coriander powder - 1 tsp 
  • Freshly crushed pepper powder - ¼ tsp
  • Freshly crushed ginger & garlic paste - 1 tbsp
  • Curd - ¼ cup, here by adding curd, it makes mutton tender
  • Lemon juice - Half of the medium sized freshly squeezed

Other Ingredients for Spicy Mutton fry:

  • Cumin seeds - 1 tsp
  • Fennel seeds - ½ tsp
  • Anise star - 1
  • Cinnamon stick - 1 Inch size
  • Cloves - 3
  • Cardamom - 1
  • Green chilies - 2 or adjust according to your taste
  • Onion - 1 medium sized finely chopped
  • Curry leaves - 2 sprig 
  • Turmeric powder - 1/8 tsp 
  • Salt - To taste
  • Red chili powder - 1 tsp or required amount
  • Garam masala powder - 1 tsp
  • Freshly crushed coriander powder - 1 tsp 
  • Freshly crushed ginger & garlic paste - 1/2 tbsp
  • Finely chopped coriander leaves - 3 tbsps 
  • Curry leaves - 2 sprig

Procedure for spicy mutton fry:

  • First wash tender boneless mutton under running water and drain out all the water. Marinate mutton by adding the Ingredients to marinate mutton. Here when you are using tender mutton allow this to marinate for 15 to 20 minutes or else marinate at least for 1 hour and for the best result, refrigerate the marinated mutton for overnight and can continue for the next step. (There is another method to marinate mutton in faster and simple process, by using raw papaya paste. After marinating mutton with papaya paste rest it for 10 to 15 minutes and can continue for the next step).
  • Heat 2 tbsps oil in a heavy bottom pressure cooker pan on a medium heat. Once the oil is enough hot, add marinated mutton pieces, mix it well completely and cook for 6 to 7 minutes on a medium flame without placing any lid.
  • Here as shown in the video, you can see a lot a water is releasing from these mutton pieces, I have not added any extra water. (If required you can add some water of your choice). Now pressure cook these mutton pieces for 3 to 4 whistles on a medium flame. Once this is done, turn off the flame and allow pressure to settles down completely. So that steam cooks mutton pieces.
  • In the meanwhile as shown in the video, set this pressure cooker aside and heat a heavy bottom nonstick pan on medium heat. Once the pan is nice and hot, add a tbsp butter and 3 tbsps oil.
  • Now add cumin seeds, fennel seeds, Anise star, Cinnamon stick, Cloves, Cardamom and sauté it once on a medium flame. 
  • Add slit green chilies, onion finely chopped, sprig of curry leaves, turmeric powder ,Pinch of salt (here by adding salt, onions will cook little faster). Mix it well completely and cook until onions turns to golden in colour on a medium flame and also stir in between cooking to prevent sticking at the bottom.
  • When the onions are nice and golden, add pressure cooked mutton pieces, freshly crushed ginger and garlic paste, salt to taste, red chili powder, coriander powder, garam masala powder. (If there is any water is still remaining in these cooked mutton pieces, cook for some more time until water evaporates completely and then add into cooked onions). 
  • Now mix it well completely, cook for 5 to 8 minutes on a low to medium heat.
  • Finally add finely chopped coriander leaves, sprig curry leaves. (Here by adding curry leaves, it gives a nice aroma for this dish). Mix it completely and then turn off the flame.
  • Serve this delicious and tasty, Andhra style spicy mutton fry into serving bowl and serve along with hot steamed white or brown rice, plain biryani, bagara rice, roti, pulka or plain paratha.
