Mushroom pepper fry Recipe

Mushroom pepper fry is a healthy, easy and tasty dish. This is the best combination with hot steamed white or brown rice, roti, pulka or plain paratha. Even beginners or bachelors can make this in a quick and easy way with minimal ingredients.



Main important components are
:

Mushrooms absorb lot of water immediately. so while cleaning, quickly rinse mushrooms under running water to remove all the dirt and cut them into cube size or desired size of your choice.

In this recipe, i prepared spice powder in small quantity by using fennel seeds, cumin seeds, dry red chili, cinnamon stick, cloves, coriander seeds, peppercorns.

when you are preparing this spice powder in large quantity, dry roast all the ingredients on a low to medium heat until golden colour and once roasted ingredients are at room temperature, grind into fine powder. This spice powder can be stored in an airtight container for 2 to 3 months and can be used whenever you require.

When you are using this spice powder immediately then it is not required to dry roast the ingredients but, when you are storing this spice powder in large quantity then it is required to dry roast.

Ingredients for Mushroom pepper fry:

  • Fennel seeds – ½ tsp
  • Cloves - 3
  • Cumin seeds - 1 tsp
  • Dry red chili - 1  or adjust according to your taste
  • Cinnamon stick - 1 Inch size
  • Coriander seeds - 1 tsp
  • Peppercorns - 1/2 tsp or adjust according to your taste
  • Turmeric powder – ¼ tsp
  • Salt - 1 tsp or adjust according to your taste
  • Oil - 3 tbsps or butter or any vegetable oil of your choice
  • Ginger & garlic paste - 1 tbsp
  • Curry leaves – 1 sprig
  • Multi coloured Capsicum or Bell pepper – 2 cups, cut them into cube size or even you can use single coloured capsicum of your choice.
  • Coriander leaves finely chopped - 3 tbsps
  • Onion - 1 medium sized finely chopped or even you can slice the onion of your choice
  • green chilies - 2 slit or adjust according to your taste
  • Button Mushroom – 12 medium size

Procedure for Mushroom pepper fry:

  • Firstly grind all the dry spices into fine powder by using mixie jar as shown in the video. Set this grinded spice powder aside. (When you are preparing this spice powder in large quantity, dry roast all the dry spices until golden colour. once they are at room temperature, grind into fine powder. This spice powder can be stored in an airtight container for 2 to 3 months and can be used whenever you require). 
  • Heat Oil or butter in a heavy bottom pan on a medium flame. Once oil is nice and hot, add finely chopped onions, green chilies, curry leaves. Mix it once and add turmeric powder, pinch of salt (here by adding salt, onions will cook little faster). Mix it well completely, cover and cook until onions turns to golden in colour on a medium flame and also stir inbetween cooking to prevent sticking at the bottom.
  • In the meanwhile, quickly rinse mushroom under running water to remove all the dirt and cut them into cube size or desired size of your choice. (Mushrooms absorb lot of water immediately. so while cleaning, quickly rinse under running water).
  • Once the onions turns to light golden colour, add freshly crushed ginger and garlic paste. Mix it well completely, cook this for few seconds on a medium flame or until the raw smell goes out from ginger and garlic paste.
  • Now add cubed mushrooms, cubed colored bell pepper or capsicum, salt to taste, grinded spice powder. Mix it well completely, Cover this and cook until mushroom and capsicum are well cooked on a medium flame and while cooking mushroom will release water, cook until water evaporates completely and after cooking mushrooms and bell pepper should retain their shape.
  • Finally add chopped coriander leaves. Mix it well completely and turn off the flame.
  • Serve this mushroom pepper fry along with hot steamed white or brown rice, roti, pulka or plain paratha.
