Ingredients for Carrot Halwa / Gajar ka Halwa:

  • Sliced Almonds – few
  • Raisins – few
  • Cashews – few
  • Ghee – 4 to 5 tbsps
  • Cardamom powder – 1 tsp
  • Milk – 2 ½ cups (full fat milk or reduced fat milk)
  • Washed, peeled and grated tender carrots – 5 cups, here I have grated by using bigger slots of the grater or you can even use food processor of your choice.
  • Sugar – ¾ cup
  • Grated paneer – 1 cup (optional) or instead of paneer you can replace with 2 cups full fat milk or ¾ cup khoya or condensed milk of your choice.

Procedure for Carrot Halwa / Gajar ka Halwa:

  • Wash, peel and grate tender carrots by using bigger slots of the grater or by using food processor of your choice.
  • Heat ghee in a wide open heavy bottom pan on a medium heat, once the ghee is enough hot, add cashews and sliced almonds. Saute it well until light golden colour.
  • Add raisins and saute it well for few seconds or until the raisins are puffed up.
  • Now to this slowly add grated carrots, here mainly prefer to use tender and juicy carrots.  mix it well completely and cook this on a low to medium heat for 5 to 8 minutes or until the raw smell goes out from these grated carrots. Once the carrots are well roasted in ghee, you will get a nice aroma from it.
  • Slowly add milk, here I am using full fat milk or even you can use reduced fat milk of your choice. mix it well, cook this until milk evaporates completely on a low to medium heat and also stir in between to prevent sticking at the bottom.
  • Now add sugar, cardamom powder. Here by adding sugar it will release lot of moisture. Mix it up completely and continue to cook until the half of the mixture thickens or moisture evaporates.
  • Finally add grated paneer and at this point you can even add a tbsp of ghee of your choice. Now mix it up completely and cook this for a minute.
  • Here our carrot halwa or gajar ka halwa is ready now. turn off the flame and transfer this into a serving bowl and serve it warm or chilled of your choice.
