Coconut rice Recipe / Thengai sadam Recipe / Kobbari annam Recipe

Today I am going to share you a famous and traditional South Indian dish Coconut rice also called as Thengai sadam / Kobbari annam. Traditionally, this is one of the dish made as naivedyam or prasadam on Sri Mahishasura mardini devi pooja during Navratri festival. This healthy and tasty dish, can make it in a quick and easy way with in few minutes when cooked rice and shredded coconut is readily available.

In these busy days, you can make a healthy, quick lunch box dish with in few minutes and can serve it as plain or with aloo curry or any veg curry of your choice.

Traditionally each house has their own recipes to prepare as Naivedyam or Prasadam during all the 9 days of navratri festival. Here I am going to share you the list which i learned from my mom and prepare as naivedyam or prasadam during Navaratri / Navratri festival.

Ingredients for Coconut rice / Thengai sadam / Kobbari annam:

  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Curry leaves – 1 sprig
  • Urad dal – 1 tsp
  • Chana dal – 1 tsp
  • Ghee – 2 tbsps. or required amount or even you can use coconut oil of your choice
  • Hing – a pinch
  • Ginger – 1 tbsp. finely chopped
  • Salt – To taste
  • Cashews – few
  • Deseeded red chilli – 1
  • Slit Green chilies – 2 or adjust according to your taste
  • Shredded coconut – ½ cup
  • Cooked Rice – 1 cup, here I have cooked in a pressure cooker

Procedure to prepare Coconut rice / Thengai sadam / Kobbari annam:

  • Heat ghee in a heavy bottom pan on a medium flame, when the ghee is enough hot add mustard seeds and allow it to splutter.
  • Now add cumin seeds, urad dal, chana dal, cashews, and pinch of hing saute it well until golden colour. Now add finely chopped ginger this is complete optional, red chili, slit green chilies, curry leaves and saute it well for few seconds.
  • Now add shredded coconut, mix it well completely and cook this on a medium flame for few seconds.
  • Now turn the flame to low and add cooked rice, salt to taste. Mix it well completely and then turn off the flame. Here in this recipe, I am using basmati rice, you can even use any kind of rice of your choice and while cooking the rice I added a tsp oil, so that each rice grain separates.
  • Here our coconut rice is ready now, transfer this coconut rice to a plate and offer to goddess as naivedyam or prasadam and can serve it as plain or with any veg curry of your choice. 
  • In this recipe, Fresh or frozen Shredded coconut can be used.
  • While cooking rice, add a tsp oil, so that each rice grain separates.
