Saakannam Recipe / Shakannam Recipe / Flavoured Mixed vegetable rice and Cucumber raita recipe


Today i am going to share you a famous and traditional recipe saakannam or shakannam. Saaka means vegetables and annam means rice. it is a combination of flavored mixed vegetable rice and this is one of the dish made as naivedyam or prasadam on Saraswati devi Pooja during Navratri festival.

To prepare this saakannam, i used 9 different types of veggies. You can even use more or less veggies of your choice and coming to rice, i used normal regular sona masoori rice, you can even use any type of rice of your choice. While preparing as naivedyam or prasadam we skip by adding onion, ginger and garlic. so i am not using it. 

Traditionally each house has their own recipes to prepare as naivedyam or prasadam during all the 9 days of navratri festival. here I am going to share you the list which i learned from my mom and prepare as naivedyam or prasadam during navaratri / navratri festival.

Ingredients for Saakannam / Shakannam:

  • Cashews – ¼ cup or required amount
  • Cumin Seeds – 1 tsp
  • Bay Leaf – 1
  • Cardamom – 1
  • Maze or javitri – 1
  • Cloves – 5
  • Cinnamon stick – 2 inch
  • Peeled and Chopped carrot – ½ cup
  • Cauliflower florets – ½ cup
  • Chopped Tindora or dondakaya – ½ cup
  • Peeled and Chopped Potatoes – ½ cup (wash it well in water to remove starch)
  • Green peas – ½ cup
  • Sweet corn – ½ cup
  • Chopped coriander leaves – 3 to 4 tbsps
  • Green chilies - 4 or adjust according to your taste
  • Green beans – ½ cup
  • Capsicum – ½ cup
  • Freshly crushed coriander powder – 1 tbsp
  • Salt – to taste
  • Ghee – 3 to 4 tbsps or even you can use oil of your choice
  • Rice – 2 cups (Here I am using sona masoori rice, you can even use any type of rice of your choice).

Ingredients for Cucumber Raita:
  • Chopped cucumber pieces - ½ cup
  • Chopped coriander leaves - 2 tbsps
  • Green chilies finely chopped - 1 tsp or adjust to your taste
  • Salt to taste
  • Roasted cumin seeds powder – 1/8 tsp
  • Thick curd – 1 cup

 Procedure to prepare Saakannam / Shakannam:

  • Wash rice well in water, drain out all the water and soak in 3 1/2 cups water or enough water for half an hour.
  • Heat a tbsp of ghee in a heavy bottom non stick pan on a medium heat. Once the ghee is nice and hot, roast cashews until light golden colour. Once they are done transfer to other bowl and into the same pan add remaining ghee or oil.
  • Add dry spices and saute it once as shown in the video. Now add slit green chilies, you can even add sliced onions, ginger and garlic paste, but here I am preparing as naivedyam or prasadam so I am not using it.
  • Now add cauliflower florets, chopped tindora, chopped carrot, chopped capsicum, chopped beans, green peas, sweet corn, chopped potatoes. Make sure the chop vegetables in equal size to cook the veggies evenly. Mix it once completely. (Here to prepare this saakannam I used 9 different types of veggies. You can even use more or less veggies of your choice).
  • Now to this add tsp salt, mix it up completely. Cook this on a medium flame and do not use lid for the first 5 minutes or until the raw smell goes out from veggies. Now cover this and cook until the veggies becomes nice and tender but they should retain their shape. Here as shown in the video, you can see the veggies are nice and tender.
  • Now add soaked rice, coriander powder mix it up completely and cook for a minute.
  • Now add 3 ½ cups water or required amount, salt to taste, half the quantity of chopped coriander leaves. Mix it up completely, cover it and cook this on a medium flame until the water reduces below rice level.
  • Now again gently mix it up completely. cover it and cook this on a low flame for 10 to 15 minutes or until rice is cooked well. When you are using pressure cooker, pressure cook this for 2 whistle and turn off the flame, make sure to pressure settle down completely and then open the lid.
  • Here as shown in the video, this is nice and done. Now turn off the flame, gently fluff it up with spatula or fork and add remaining half the quantity of chopped coriander leaves, roasted cashews. Cover it and rest it for 5 minutes, make sure to turn off the flame.
  • In the meanwhile, you can prepare cucumber raita. 

    Procedure to prepare cucumber raita:

    • Add all the ingredients into thick curd which are listed under Ingredients for Cucumber Raita. Mix it up completely.
    • Here our cucumber raita and saakannam are ready now. Transfer Saakannam / Shakannam into a plate and offer this to god as naivedyam or prasadam along with cucumber raita.
    • Saakannam / Shakannam best combination is with cucumber raita.
