Aratikaya Chips Recipe / Green Plantain chips Recipe / Banana Chips Recipe


Today I am going to share you Green plantain chips also called as Aratikaya chips. These crispy, spicy and tasty chips can make it in a quick and easy way with in less point of time, and can serve it as a tea time snack or else as a side dish for sambar or rasam or with any dal curry of your choice.

These Green plantains or Aratikayalu are hand plucked at my mom's farm. Here in this recipe, we can make these slices without peeling the skin of green plantains, just we need to trim the ends and then start slicing into thin slices by using slicer. (Make sure to slice them in small batches and while deep frying simultaneously you can slice for another batch). If you are not interested with skin, you can even peel  the skin of green plantain and can make it into chips.


One important component in this recipe: Slice Arati kayalu into thin slices in small batches and immediately after deep frying sprinkle enough amount of salt and red chili powder or pepper powder. so that the spices will nicely stick to fried slices. (make sure to do this in small batches).

You can store these Aratikaya Chips / Green Plantain chips in an airtight container for 10 to 15 days once they are at room temperature and can serve it as a tea time snack or else as a side dish for sambar or rasam or with any dal curry of your choice.

So lets start making it for this let us see the ingredients

Ingredients for Aratikaya Chips / Green Plantain chips:

  • 5 large Green plantains(Aratikayalu),  If you are making in small quantity use 2 large green plantains
  • Salt – Adjust according to your taste
  • Red chili powder – Adjust according to your taste
  • Oil to deep fry

Procedure to prepare Aratikaya Chips / Green Plantain chips:
  • Heat oil to deep fry in a heavy bottom kadai or pan and on the other side, wash the green plantain well in water and pat dry with paper napkin or else with a clean cloth.
  • Now trim the ends off green plantain and start slicing into thin slices by using slicer as shown in the video. Make sure to slice them in small batches. (Here as shown in the video, you can see I have sliced it very thin. you can even peel the skin of green plantain and slice them into thin slices).
  • Now gently drop these thin slices into hot oil and fry them until golden color on a medium flame. After dropping in oil, the oil will froth up with bubbles which will eventually  subside when the slices turns to golden in colour. While frying do not crowd the pan, fry them in small batches and also Stir it by using slotted ladle or with wire skimmer for even frying.
  • Now transfer the fried slices into a wide open bowl by using wire skimmer. These chips are nice and crisp as shown in the video. Now immediately sprinkle enough amount of salt and red chili powder or even you can use pepper powder of your choice. so that the spices will nicely stick to fried slices. Now gently mix it well completely or even you can toss as shown in the video.
  • Here our crispy, spicy and tasty green plantain chips or aratikaya chips are ready now. Transfer them into an airtight container once they are at room temperature and do the remaining in small batches. 
  • You can store these Aratikaya Chips / Green Plantain chips in an airtight container for 10 to 15 days and can serve it as a tea time snack or else as a side dish for sambar or rasam or with any dal curry of your choice.
Note:
  • Slice the green plantain chips in small batches (otherwise it changes the colour) and fry them in small batches.
  • I would like to share you a tip from this recipe, while cleaning the slicer apply some cooking oil and rest it for some time and then by using rock salt clean it so that it will get rid off sticky kind of starch.
