Pineapple rava kesari Recipe / Pineapple sheera Recipe / Pineapple Halwa Recipe


Today i am going to share you a most popular indian dessert, pineapple rava kesari also known as pineapple sheera or pineapple halwa which is often made in most of the indian homes for any festive or special occasions. When there are any unexpected guests at home, you can make it in a quick and easy way in few minutes without any expertise and end result will be perfect and rich in taste.

The key ingredients in this recipe are sooji or semolina, pineapple pieces, sugar, ghee.

Few important components in this recipe:
  1. For pineapple kesari to get a nice and perfect texture, dry roast sooji until you get nice aroma and crunchy texture, by adding ghee you will get a nice aroma which will melt in your mouth. 
  2. When comes to pineapple pieces, you will get a nice aroma while roasting these ripen pineapple pieces in ghee. Here instead of pineapple pieces you can even use pineapple puree or artificial essence. But to get natural flavor, better to use pineapple pieces or puree. 
  3. Saffron strands gives a nice flavor and natural yellow colour. In this way you can avoid artificial colour.
  4. Instead of water, you can even use milk of your choice and the end result will be rich and creamy texture.

Ingredients for Pineapple kesari: 
  • Ripen Pineapple pieces or pineapple puree - 1 cup
  • Sugar - 1 cup or adjust according to your taste
  • Sooji or semolina - 1 cup
  • Water - 2 cups
  • Few strands of saffron
  • Cardamom powder - 1 Tsp
  • Raisins - few
  • Cashews - 8 to 10
  • Ghee – ¼ cup or adjust according to your taste
Procedure for Pineapple kesari: 
  • Dry roast sooji in a heavy bottom pan on a medium flame until you get nice aroma and crunchy texture for few minutes. Transfer to other plate.
  • Into the same pan, add 3 tbsps of ghee and once the ghee is nice and hot, add cashews and saute it well until light golden colour. when the cashews are turning to golden colour add raisins and saute it well until the raisins are puffed up or for few seconds. Transfer the roasted nuts to other bowl.
  • Into the leftover ghee, add pineapple pieces, (if you are not interested to have the pineapple pieces, you can even add pineapple puree) and saute it well for 2 to 3 minutes on a medium flame or until you get nice aroma from it. (here by adding ripen pineapple pieces, it is not required to add any artificial essence).
  • Now add water( instead of water you can even add milk of your choice), saffron strands, cardamom powder. cover this and bring this to boil. ( by adding saffron strands that gives nice flavor and natural yellow colour. In this way you can avoid artificial colour).
  • When water starts to boil, turn the flame to low to medium and mix it once completely.
  • Now slowly add roasted sooji with one hand, with other hand stir it continuously to prevent lumps and cook till all the water evaporates completely as shown in the video.
  • Now slowly add sugar and mix it well until the sugar is well combined with sooji on a low to medium heat. Here as shown in the video, you can see this is nice and shiny.
  • Now add rested ghee, half the quantity of roasted dry fruits. mix it well completely and turn off the flame. Cover this for few minutes. 
  • Here our Yummy and tasty pineapple kesari is ready now. Serve this pineapple kesari into a serving bowl and garnish with remaining roasted dry fruits.
