Cracked wheat kheer Recipe / Godhuma rava payasam recipe / Samba rava (Gothumai ravai) payasam recipe / Gothambu rava payasam recipe


Today i am going to share you a tasty and healthy Cracked wheat kheer, also known in different regions as Godhuma Rava Payasam or samba rava (gothumai ravai) payasam or dhaliya kheer or gothambu rava payasam. We can make this in a simple and easy way for any festive or any special occasions and offer to god as a naivedyam or prasadam.  

Cracked wheat kheer can be made into different variations by roasting the cracked wheat or by soaking and by using whole milk or reduced fat milk or thin coconut milk. The method which i am sharing you is to soak the cracked wheat in water for 30 minutes to 45 minutes and cook in whole milk or reduced fat milk or even in thin coconut milk until the cracked wheat is well cooked. In this method it doesn't take much milk to cook this cracked wheat and the kheer will be perfect and rich in taste.

Here there is another method to prepare this cracked wheat kheer by roasting cracked wheat instead of soaking it. In this method, dry roast cracked wheat or even roast it in ghee until you get nice aroma from it for few minutes but in this method, it consumes little extra milk when compared with which i am sharing it to you and even i tried in this method too the end result will be rich and perfect.

The same method of cracked wheat kheer or payasam, we make rice kheer (payasam) too. Replace rice instead of cracked wheat.

The main important component in this recipe are:

1. When you are using shredded or grated jaggery, add it after turning off the flame, when the cracked wheat is completely cooked otherwise milk will curdle. Not only for this recipe, for any recipe when you are using jaggery and milk combination add jaggery after turning off the flame. If you feel the jaggery is having any impurities better to melt in 2 tbsps of water and filter this mixture by using tea strainer. (Here instead of jaggery, sugar can be replaced but do remember jaggery is good for health when compared with sugar).

2. When the cracked wheat kheer is at room temperature or refrigerated, kheer thickens little bit and if you want it in a thin version then before serving it add some boiled milk, mix it up completely and can serve it warm.

3. When you are using coconut milk instead of normal milk better to use thin coconut milk and the remaining process is the same and instead of cracked wheat, rice can be replaced.

4. Here Instead of sugar, jaggery can be replaced too but the combination of sugar and jaggery gives an excellent taste. If you are health conscious better to use cracked wheat and jaggery combination.

Ingredients for Cracked wheat kheer / Godhuma Rava Payasam :
  • Cracked wheat - 1/2 Cup
  • Whole milk / Reduced fat milk / thin coconut milk - 3 cups
  • Sugar - 3 tsps or Adjust according to your taste
  • Shredded or grated jaggery - 1/2 cup or Adjust according to your taste
  • Cardamom powder - 1 tsp
  • Few strands of Saffron (optional)
  • Sliced or broken Cashews - 8 
  • Sliced or broken Almonds - 8
  • Sliced or broken pistachios - 8
  • Raisins - few
  • Sliced Seedless Dates - 4
  • Ghee - 2 tbsps
Procedure for Cracked wheat kheer / Godhuma Rava Payasam:

  • Wash cracked wheat well in water and by using tea strainer drain out all the water and soak in a cup of water half an hour to 45 minutes.
  • Heat ghee in a heavy bottom non-stick pan on a medium heat, once the ghee is nice and hot add broken cashews, almonds, pistachios (or dry fruits which are available at home) and saute it well until light golden colour. when they are turning to golden colour add raisins, sliced seedless dates and saute it well for few seconds or until the raisins are puffed up. make sure you don't brown them. 
  • Transfer the roasted dry fruits to other bowl and into the same pan, add milk and bring it to boil on a medium flame, stir inbetween to prevent sticking at the bottom and once milk starts to boil, mix it well completely and add soaked cracked wheat including water, Mix it well completely. cover this and cook until cracked wheat is well cooked on a low flame or for 15 minutes and stir inbetween cooking to prevent sticking at the bottom. Here instead of cracked wheat you can even use rice of your choice. But if you are health conscious better to use cracked wheat.
  • When the cracked wheat is nicely cooked and increased in volume. you can even check this cooked cracked wheat by pressing it with your fingers as shown in the video.
  • Now add sugar, cardamom powder, saffron strands and half the quantity of roasted dry fruits. Mix it well completely until sugar melts and then turn off the flame.
  • Now rest it for a minute and add shredded jaggery, mix it well until the jaggery is well combined. Make sure to turn off the flame, before adding jaggery otherwise milk will curdle and also if you feel jaggery is having any impurities you can even add melted jaggery (which is melted in 2 tbsps of water or enough amount and strain it by using tea strainer).
  • Here our healthy and tasty cracked wheat kheer or godhuma rava payasam is ready now. Serve this warm or chilled cracked wheat kheer into a serving bowl and garnish with remaining roasted dry fruits.
  • When the cracked wheat kheer is at room temperature or refrigerated, kheer thickens little bit and if you want it in a thin version then before serving it, add some boiled milk, mix it up completely and can serve it warm.
