Almond Cookies Recipe / How to make Almond Cookies

On the Special Occasion of New year, today i am going to share you a delicious Almond Cookies and
this Delicious Almond Cookies are Slightly Crunchy texture with the almond flavour coming through each bite and are not overly sweet. These homemade Almond Cookies are all time Kids Favorite Cookies, especially My daughter love these cookies a lot, She is just 2 1/2 years old...:)

Almond Cookies can be made with minimal ingredients that are available at home everyday. Here almonds are the star players of this cookies and to get perfect result of this Almond Cookies it is always to measure out all the ingredients exactly while baking.

This Homemade Almond Cookies are so simple and easy to prepare within less point of time and even beginners can learn it very fast by following below steps. You can even store these for about 15 to 20 days in an airtight container, make sure the Almond Cookies are at room temperature before storing it.

Ingredients:
  • 1 1/2 Cups All-Purpose Flour
  • 1 Tsp Baking Soda
  • 1/8 Teaspoon Salt (When you are using salted butter, skip this ingredient)
  • 1 Tsp Cardamom Powder
  • 1 Cup Almonds
  • 1/2 Cup Unsalted Butter, Softened (should be at room temperature)
  • 1 Egg (should be at room Temperature)
  • 3/4 Cup Sugar
  • 1 Tsp Vanilla Extract 
  • 1/4 Almond Extract
  • Baking sheet

Procedure to make Almond Cookies:
  • Grind 1/2 Cup Almonds into fine powder and thinly slice remaining 1/2 Cup and set aside.
  • Preheat the oven to 350°F or 180°C.
  • Line the cooking baking sheet with parchment paper or grease the baking sheet with butter and sprinkle some flour as shown in the video. set aside.
  • In a mixing bowl, Add all-purpose flour, Cardamom Powder, baking soda, salt, powdered almonds, sliced almonds. mix it well until they are well combined and the dry ingredients mixture is all ready. set aside.
  • Into a large mixing bowl, add butter, make sure the butter is at room temperature and add Sugar or powdered sugar, beat it well until it is nice and creamy texture for approximately a minute or two by using the hand mixer or whisk (by using whisk it takes little more time).
  • Now add vanilla extract, almond extract, egg (should be at room temperature) and beat it well until it is nice and smooth for approximately 2 minutes.
  • Now slowly add dry ingredients into wet ingredients and mix it well, make sure you don't overmix it.
  • Now take spoonful of the dough, place on the baking sheet and do the remaining dough in the same procedure, make sure there is a space between two dough balls or even you can dust with some flour to your hands and make it into small size balls and place them on the baking sheet. As shown in the video.
  • Now place the baking sheet in the center of the preheated oven and bake them for about 10 minutes or until the bottom sides turns to golden colour, Make sure do not over bake them and once it is done transfer them onto to wire rack and let them cool down completely.
  • You can even store this almond cookies in an airtight container for about 15 to 20 days. make sure cookies are at room temperature before storing it.
  • Yummy and Tasty Homemade Almond cookies are ready to serve. 

Variations:
  • Replace the Almonds with Pistachios or walnuts.
Note:
  • When the kids are not interested to have sliced almonds better to make into fine powder.
