Mixed vegetable Uttapam is a famous south Indian breakfast recipe. This is one of the thicker dosa variety also known as south Indian pizza. This will be crispy and soft with mixed vegetables and tastes amazing...:)

This is a one of the simple south Indian pancake recipe, prepared with urad dal and rice. we can make into plain Uttapam or different veggie Uttapam toppings with Chopped onions, shredded carrot, Chopped tomatoes, chopped green chili, chopped coriander leaves and so on... There are many different varieties of uttapam like plain uttapam, onion uttapam, mixed vegetables uttapam, kids Uttapam, cheese uttapam, Tomato uttapam, butter uttapam and so on...

Serve this Uttapam with Roasted chana dal and peanut chutney or Ginger Chutney or Peanut Chutney or desired chutney of your choice.

This is simple and easy recipe, when the batter (All in one batter) is in hand. One trick from this recipe is once a week, While grinding the batter grind it into thick batter so while preparing breakfast we can prepare into many different varieties of dosa, uttapam, punugulu, ponganalu and so on... by adding required amount of water.

Serves: 9 to 10 medium Size uttapam

Ingredients:
  • Urad dal - 1 Cup
  • Rice - 2 Cups
  • Flattened Rice - 1/4 Cup
  • Fenugreek Seeds - 1/4 Tsp
  • water - 3 Cups
  • Salt - 1Tsp or required amount
Topping for mixed Vegetable Uttapam:
  • Onion - finely chopped 2 tsps
  • Carrot - shredded 2 tsps
  • Tomato - finely chopped 2 tsps
  • Green chili - finely chopped 1/2 tsp or adjust to your taste
  • Coriander Leaves - finely chopped 2 tsps
  • Oil - 1/4 tsp or required amount
  • Shredded Mozzarella cheese - 2 to 3 tbsps or Required amount (for kids uttapam)
These Topping measurements are only for one uttapam. you can make it into large quantity.

Ingredients for Roasted chana dal and Peanut Chutney:
  • Peanuts - 1/2 Cup
  • Roasted chana dal - 3/4 Cup
  • Green chilies - 2 Slit or adjust to your taste
  • Garlic - 2 finely chopped
  • Cumin seeds - 1 tsp
  • Fenugreek Seeds - 4 to 5
  • Tamarind - 1 Inch size small piece or Dry mango powder - 1/2 Tsp
  • Salt - 3/4 Tsp or adjust to your taste
  • Hing - Pinch
  • Oil - 1 1/2 tsps
  • Water - 1 Cup (by rice measuring cup) or required amount
Seasoning:
  • Oil - 2 Tsps
  • Mustard seeds - 1/2 Tsp
  • Urad dal - 2 tsps
  • Curry leaves - few
Procedure for Roasted chana dal and Peanut chutney:
  • Heat a pan on a medium heat, add oil. once the oil is enough hot, add fenugreek seeds, cumin seeds, chopped garlic, peanuts, slit green chilies, pinch of hing and saute it well until peanuts crack open and golden colour. (if you are using tamarind add it before turning off the flame).
  • Turn off the flame. Allow the mixture to cool down completely and transfer into the mixie jar, add enough amount of salt, dry mango powder, roasted chana dal and grind it into smooth paste by adding water little by little. As shown in the video.
  • Transfer into another bowl and do the seasoning for chutney.
Seasoning for chutney:
  • Heat a pan on a medium heat, add oil. once the oil is enough hot, add mustard seeds, urad dal, curry leaves and saute it well until golden colour. Turn off the flame and transfer the mixture into chutney.
  • Tasty roasted chana dal and peanut chutney is ready now. Serve this chutney with warm uttapam.
Procedure for mixed Vegetable Uttapam:
  • Wash Urad dal, Rice, flattened rice, fenugreek seeds well in water and soak in 3 cups of water for 6 to 8 hours or overnight.
  • Grind it into thick dosa batter consistency by using soaked water and allow the batter to ferment for 6 to 8 hours or overnight. Add enough amount of salt, mix it well and set aside.
  • Heat a tawa or non-stick pan on a medium heat, add few drops of oil and wipe it with a paper napkin or clean cloth over the tawa.
  • Once tawa is enough hot, turn the flame to low - medium and pour ladleful of batter and spread it in circular direction little bit (if it is too thick) as shown in the video.
  • Do the toppings with some chopped onions, shredded carrot, chopped tomatoes, chopped green chilies (adjust to your taste), chopped coriander leaves. (when you are preparing for kids just omit green chilies) or for kids cheese uttapam do the toppings with some shredded carrot, shredded cheese of their choice. As shown in the video.
  • Pour some oil to the sides and on the top of uttapam, cover this with airtight lid and cook until golden colour from the bottom side (not required to flip this uttapam the upper part veggies will steam cook).
  • When it is nice and golden from bottom side, transfer to serving plate  and serve this with roasted chana dal and peanut chutney or desired chutney of your choice.
  • Do the remaining in the same procedure, serve it warm with roasted chana dal and peanut chutney.
