Puffed Rice Upma Recipe / Uggani Recipe / Murmura Upma Recipe / Maramaralu Upma Recipe / Borugula Upma Recipe

Puffed Rice Upma is a Famous South Indian Snack or Breakfast. In many regions, this is also known as Uggani, Borugula upma, Murmura upma, Maramaralu Upma. Serve this dish with ginger tea along with mirchi bajji...:)

This is a simple and basic recipe, everyone have their own version of making it. Process of making might be different by region to region but this will be spicy and tasty...:)
Me and my family members love this puffed rice upma little spicy especially on a rainy day or during cold weather along with mirchi bajji and Ginger tea or coffee. Generally on a rainy day, we prefer some spicy snacks along with tea or coffee.

Even when any unexpected guests are at home, you can make this dish very easily within fraction of seconds along with ginger tea.

One of the main ingredients for this dish are roasted chana dal powder, peanuts.
By adding roasted chana dal powder, it gives an additional taste to this dish and the crunchiness of peanuts gives more taste to this dish. you can even add deep fried peanuts at the end of the recipe.

For this recipe, you can even add more vegetables of your choice like capsicum, green peas, sweet corn, potatoes etc...

  • Puffed Rice - 7 cups
  • Onion - 3/4 Medium size thinly sliced
  • Tomato - 1 Large size finely chopped 
  • Carrot - 1/2 Cup finely chopped
  • Ginger - 1 Inch size finely chopped
  • Green chilies - 2 thinly sliced or finely chopped (adjust to your taste)
  • Red chili - 1
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1 tsp
  • Chana dal - 1 tsp
  • Urad dal - 2 tsps
  • Peanuts - fistfull
  • Curry leaves - few
  • Hing - 1/8 tsp
  • Salt - 3/4 tsp or adjust to your taste
  • Turmeric powder - 1/8 tsp
  • Coriander Leaves - 4 tbsps
  • Roasted chana dal powder - 2 tsp or adjust to your taste
  • Lemon Juice - 2 tsps or adjust to your taste
  • Oil - 2 tsps

Procedure to make Puffed Rice upma or Uggani:

  • Heat a heavy bottom pan, add oil. Once hot, add mustard seeds and once it splutter add cumin seeds, chana dal, urad dal, peanuts, broken Red chili and saute it well until golden colour.
  • Now add hing, turmeric powder, curry leaves and saute it once.
  • Now add chopped green chilies, chopped ginger and saute it well for few seconds. while frying ginger you will get nice aroma from it. if you are not interested with ginger just omit it but do remember ginger is good for health.
  • Add thinly sliced onions, Chopped carrot and cook until onions are translucent on a medium flame.
  • In the meanwhile, and water to the puffed rice and immerse puffed rice completely in water, squeeze out all the water with both of your palms, transfer to other bowl. After squeezing, they should be moist. set aside. (Not required to soak in water). As shown in the video.
  • Add Chopped tomatoes and saute it well for few seconds.
  • Add puffed rice, Salt, chopped coriander leaves and saute it well completely. As shown in the video this will be colourful.
  • Now add roasted chana dal powder, Lemon juice saute it well and turn off the flame.
  • Serve this tasty uggani or murmura upma along with mirchi bajji or ginger tea as a evening snack.
