Soya Mint Rice or Meal Maker Mint Rice is a healthy and Tasty dish. This recipe is so simple and easy to prepare with less ingredients. Anyone can prepare this recipe with in less point time and even when you are not having any vegetables you can prepare this dish with soya chunks and mint leaves.

Soya Mint Rice or Meal Maker Mint Rice is a perfect dish for lunch or dinner without any side dish. This is another easy and quick dish that can be cooked with in less than 10 minutes, if you have cooked rice in hand or even you can make this dish with the leftover rice.

Soya Chunks are rich in Protein and Fiber and can make many varieties in rice dish and is often used to make biryani, Curries, Fries, Manchurian....

Ingredients:

  • Rice - 1 1/2 Cups
  • Soya Chunks - 25 to 30 medium size or 1 Cup
  • Onion - 1/2 medium size (Finely Chopped)
  • Green chilies - 2 (Finely Chopped or Slit) or Adjust to your taste
  • Ginger & Garlic Paste - 2 Tsps
  • Cumin Seeds - 1 Tsp
  • Mint Leaves - Fist Full
  • Coriander Leaves - Fist Full
  • Turmeric powder - 1/8 Tsp
  • Coriander Powder - 1 Tsp
  • Garam Masala Powder - 1/2 Tsp
  • Salt - To Taste
  • Oil - 4 Tbsps

Procedure:

  • Wash and Soak rice well in water. Cook the rice by adding enough amount of salt and Tbsp oil. (By adding oil each grain of the rice will separate).
  • Boil water in a heavy bottom vessel. Add soya chunks in boiling water and boil it for 2 minutes on a medium flame or until they are nice and tender.
  • Drain and squeeze out all the water.
  • Chop the soya chunks into two pieces. this is optional or continue to next step.
  • Take a heavy bottom pan, add 3 tbsps oil. once the oil is nice and hot, add cumin seeds, chopped green chilies, chopped onions and saute it well until the onions are transparent on a medium flame.
  • Now add Chopped mint leaves, Coriander leaves, Turmeric powder, Coriander powder, Garam masala powder, Salt and mix it well.
  • Now add Chopped soya chunks, mix it well. cover with the lid and cook for 2 to 3 minutes on a very low flame. The soya chunks will absorb all the masala.
  • Now add cooked rice. mix it well. cover with the lid and cook for 1 minute on a very low flame.
  • Healthy and Tasty Soya mint rice is ready now. Serve Soya Mint Rice in a serving plate.
  • Soya Mint Rice is a perfect dish for lunch or dinner without any side dish.
