Veggie Nuggets Recipe

Veggie nuggets are crispy from outside & soft from inside with different flavours of vegetables. This is a kids favorite dish and even we will love to have this dish.Serve it hot with Tomato Chili Sauce or Tomato ketchup as a tea time snack or even as a Starter .
Kids who are not fond of vegetables, try in this way so they will love to have it.

  • Potatoes - 4 (Medium Size)
  • Bell Pepper (Finely Chopped) - 1/2 Cup
  • Carrot (Finely Chopped) - 1/2 Cup
  • Onions (Finely Chopped) - 1/2 Cup
  • French Beans (Finely Chopped) - 1/4 Cup
  • Green Chilies (Finely Chopped) - 2 (Adjust to your taste)
  • Garlic Cloves (Finely Chopped) - 3
  • Ginger (Finely Chopped) - 1 Inch Size
  • Paneer (Grated or Finely Chopped) - 1/2 Cup
  • Cheese (Grated) - 1 Tablespoon
  • Sweet Corn (Blanched) - 1/4 or 1/2 Cup
  • Green Peas - 1/4 Cup
  • Pepper Powder - 1/2 Tablespoon (Adjust to your taste)
  • Coriander Powder - 1 Tablespoon
  • Red Chili flakes - 1 Teaspoon (Adjust to your taste)
  • All purpose flour - 5 Tablespoons
  • Corn Starch - 3 Tablespoons
  • Basil - 1 Teaspoon
  • Oregano - 1 Teaspoon
  • Salt - 1 tsp (Adjust to your taste)
  • Corn Flakes (Crushed) - 1 Cup
  • Bread Crumbs - 1 Cup
  • Curry leaves (Finely Chopped) - Few 
  • Coriander leaves - 5 to 6 Tablespoons 
  • Garam Masala Powder - 1/2 Tablespoon 
  • Oil - To deep Fry
  • Peel the skin of Boiled potatoes and Mash with potato masher or grate by using bigger slots of the grater.
  • To the mashed potatoes, add Chopped Ginger, Garlic, Onions, Carrot, French Beans, Bell pepper, Green peas, Sweet corn, Paneer, Cheese.
  • Mix it well. Add Crushed basil, oregano, finely chopped curry leaves, pepper powder, Red chili flakes, Coriander powder, Coriander leaves, Chopped green chilies, salt to taste, 2 tbsps all-purpose flour, 2 tbsps bread crumbs, 1/2 tbsps garam masala powder.
  • Combine it well.
  • Take small quantity or 2 tbsps of the mixture and shape it into 1 1/2 Inch Square or else desired shape.
  • Now into a mixing bowl, add 3 tbsps All-purpose flour, 3 tbsps Corn flour and add enough water and make into thick paste.
  • Add hot water and make it into thin and smooth paste.
  • In one plate, add corn flakes crumbs, bread crumbs and mix it well. set aside.
  • Dip one of the shaped nugget and immediately coat with Crumbs mixture. Recoat if you wish to.
  • Repeat the crumb coating process for all the nuggets.
  • Heat up a wok with the oil to deep fry the nuggets.
  • Once the oil is nice and hot, turn the flame to medium heat and slowly drop the nuggets and fry the nuggets one by one on both the sides until golden colour.
  • Repeat the process with all the nuggets.
  • Serve this hot veggie nuggets with tomato chili Sauce or Tomato ketchup or any chutney of your choice.
  • Boiled Potatoes must be at room temperature.(If you are using immediately after boiling, we can't even shape the nuggets and absorbs lots of oil).
  • You can use any kind of vegetables of your choice.
  • When you are having less vegetables, increase the quantity of vegetables of your choice.
  • For Crumbs coating you can use any of Bread crumbs or else corn flakes crumbs. By mixing these two gives a good combination.
  • Fry the nuggets on a medium flame, so that the inside raw vegetables will cook nicely.
