Capsicum Masala Rice Recipe / Bell Pepper Rice Recipe / Capsicum Rice Recipe



Simple, delicious and flavorful Capsicum Masala rice. Anyone can prepare this Capsicum Masala Rice and also perfect for lunch box without any side dish. The flavor of Capsicum along with the Crunchiness of peanuts makes this rice very tasty.


Ingredients:
  1. Rice - 2 Cups
  2. Cumin Seeds - 1 1/2 tsp 
  3. Mustard Seeds - 1/2 tsp
  4. Coriander Seeds - 2 tsp's
  5. Split Urad Dal - 2 tsp's
  6. Chana Dal - 2 tsp's
  7. Red chilies - 4
  8. Cashews - 6 to 7 
  9. Ground Nuts - 1/2 Cup
  10. Green Chilies - 1 or 2 (As per the Spiciness, you can increase or else decrease)
  11. Onion - 1 Medium Size (Sliced into 1 inch size)
  12. Capsicum - 2 Medium Size (Sliced into 1 inch Size)
  13. Ginger & Garlic Paste - 2 tsp's
  14. Garam Masala Powder - 1 tsp ( or else Adjust to your taste)
  15. Curry Leaves
  16. Oil or Butter - 5 to 6 tsp's
Procedure:
  1. Wash 2 cups of Rice under water for once or twice. Soak the rice with 4 cups of water for at-least half an hour. While rice is soaking prepare other ingredients and chop veggies.
  2. After Half an hour cook the rice by adding some salt and 3 to 4 tsp's of oil. By adding oil rice grain will not stick together.(or else you can also use the left over rice).
  3. Take a Wide open pan, Add Red chilies, Mustard Seeds, Cumin Seeds, Coriander Seeds, Chana dal, split urad dal and dry roast all the ingredients until light golden brown colour (till the rawness disappears) on a medium flame. Now transfer all the roasted ingredients into other plate and allow it to cool completely. Grind all the roasted ingredients into fine powder and set aside.
  4. To the same pan, dry roast Peanuts until light golden brown (till the rawness disappears) on a medium flame. Transfer to other plate and allow it to cool Completely. Now grind it coarsely and set aside.
  5. To the Same pan, add 4 to 5 tsp's of oil or butter. Once the oil is enough hot add 1/2 tsp of cumin seeds, cashews and saute it till light golden brown.
  6. Now add green chilies, curry leaves, Sliced onions and cook until onions are translucent (or for 2 minutes) on a medium flame.
  7. Now add Sliced Capsicum. Do not over cook them, let the capsicum retain their crunchy texture.
  8. Add Ginger & Garlic Paste, Garam masala Powder and saute it for 1 minute.
  9. Now add the ground spices powder,coarsely crushed peanuts and salt. mix it well and cook for 1 or 2 minutes.
  10. Add Cooked rice and mix it well.
  11. Finely add coriander leaves, mix it well and turn of the flame.
  12. Simple delicious and flavorful Capsicum Masala rice is now ready to serve.
Note:
  •   you can also use various coloured Capsicum.
  •   Water measurement varies by using different types of rice.
